Easy, healthy, anywhere in the world – Flax Tortilla

I absolutely love nothing more than taking care of my body. Well, I actually love a lot of things in life, and that just happens to be one of the tops! It is so vital that we love and nurture our bodies, as they do so much for us, and the better we take care of our body the better it will take care of us. Especially in times of illness. If you love and nurture your body daily, it will bounce back from unforeseen illness so much faster.

No joke, travelling the globe I have experienced some seriously crappy travel illnesses. Something you can’t really get away from when travelling. Plus, just being home in the city also brings about some bugs. So, regardless of where I am, I prefer to keep my immune system in extra good shape, that way, in turn, my body is stronger and can naturally be healthy, vibrant and awesome.

Not to mention, when it comes to food, I like it to be easy, and tasty!! Something I can do anywhere and anytime. Travelling, camping, at home. You name it, I like to always have the ability to bring health and wellness to the table.

This flax tortilla is incredibly tasty and so easy to make.

All you need is 3 things.

  • Ground Flax Seed
  • Salt
  • Water

For this one tortilla, I used about 3/4 cup of ground flax seed, a dash of salt and about 1/4 cup of water.

You can also add any spices or herbs that you would like to change up the flavour. What can I say?! So versatile.

Once you mix it up, roll it in a ball, and let it sit for a couple of minutes while the pan heats up, then place it in the pan and use the back of a spoon to flatten it out gently.

I say gently as it will break if you are too rough, but if you are gentle, it will flatten super easily.

Cook both sides until golden brown, and then add your choice of toppings. Voila! You have an incredibly tasty morsel, chalked full of Omega 3’s, fibre and antioxidants.

I change my topping’s all the time. This time around I put, organic grass fed cream cheese, avocado, cherry tomato and fresh mint.

It’s even better when combining it with a fresh smoothie.

So easy to make, and even easier to get addicted too. Here’s to glowing, no matter where in the world you are.

A Dining Experience Not Soon To Be Forgotten At Petty Catwater

There are those times where and when you least expect it that you find a total unexpected gem. Those times are the best. Those are the places I am always on the search for.

Here I am enjoying some time in the Quesnel, BC area, and I was suddenly made aware of one such unique place – Petty Catwater.

This little property turned chic farm style home and Bed & Breakfast, offers these incredible Farm Table evenings of culinary delights and wine. Umm, yes please!

Owned by a very lovely couple, Bruce and Jenn have put their heart and soul and 17 years of building to make this little slice of heaven a reality.

With all ingredients being local, and Jenn, whom is also the chef, having trained in France, you know you are going to be in for a treat. I truly had no idea what kind of unforgettable treat I was actually in for.

Upon arriving to the property you pull in by an honesty stand.

I love the concept of honesty stands! I see them quite a lot around British Columbia, and I just think they are great. Honesty makes the world go round and having integrity makes a persons life so much more rewarding.

As you walk into the yard its hard not to be immediately enamored by the elegant farmhouse design and landscape.

As you walk around you can even get a glimpse of what is in store.

There is a garden where in the summer they grow the majority of their produce, and some lush little sitting areas for the guests whom are staying on property at the BnB.

Not only do they have the Bnb, but they also accept Wwoofers(willing workers on organic farms) where they have volunteers come and exchange work for food and accommodation. IMG_6453

I enjoyed a lot of wwoofing experiences around the globe in my backpacking days, so this spoke straight to my heart.

The Bed & Breakfast is located in a separate building to the house. Which is nice as it feels very private.


I was pleasantly surprised at the warm and inviting atmosphere of the BnB, and the chic decor. It was done in such a way that you feel quite luxurious up there. To me it felt as though I was back in Europe again.

The dining area is in an addition, with a long table with proper fine dining settings. Once again the decor was spot on in the house as well.

I really have to give kudos to Bruce and Jenn for how well their interior and exterior designing skills are.

I was loving the long table concept as well. Again bringing me back to Europe. As you sit at a table among strangers, it doesn’t take very much time for the conversation to flow as good as the vino. I had the best date in the room though – my darling sister! Some of the best dates are the ones you take your sister on.

The food. Oh my the food. Where to begin really.

The starters were home made French Onion soup accompanied with a divine fluffy crusted pizza. Seriously, every bit I took was better then the last.

As we moved onto the main course, the culinary journey of grand proportions did not slow down.

There was plenty of slow cooked, perfectly seasoned, melt in your mouth meats to choose from, a beautiful array of roasted vegetables, and a superb mash of combined potatoes.

One must be careful not to over do it on dinner as there is still dessert on the menu. Trust me, its hard not to have seconds, or thirds. Loose fitting clothes perhaps are a good option.

Coffee and home made cakes for dessert seemed so fitting to complete this divine experience. There was a fresh fig cake, and a pear cake made with Guiness.

Every single guest at the table had pure satisfaction beaming out of their faces.

Bruce and Jenn do this amazing job of opening up their home and making you feel so comfortable, and transport you to a place of class and spoiling. You feel and taste their passion in all that they do here. I would go back simply to be in their company once again. But really, I need to go back and experience a night in the Bnb. If their dinner is that good, I bet the breakfast is something to write home about too. It is a place not to be missed.

Northern Canadian Class – Dining In Style At ‘The Back Eddy’

Classy dining around the globe is a hobby that I take very seriously. Enticing the palette with incredible and unique flavors and food pairings, all while surrounded in a comfortable chic atmosphere – is exactly what I am after when dining out. I am continually on the hunt to find the best and most amazing places to experience and share around the world. It’s an art that one can’t help but appreciate.

Here in the hub of the North – Hay River, NWT, there happens to be one of my absolute life long favorites. The Back Eddy. They always provide an unforgettable experience, and the dishes will never disappoint.  Having been in business for over 40 years,  it is clear there are many things being done right here.

The decor of The Back Eddy reflects a nautical theme, adorned with helms, and various pieces from ships.

Hay River has been a port for shipping and barging for many years, so it was very fitting for The Back Eddy to take on this theme. The name is derived from an ‘Eddy’, which is a whirl of water, and in this case, ‘Back Eddy’, intended to represent the whirl of water created by the back of the ship.

The original owner of The Back Eddy also created what’s called, Back Eddy Spice, which is still sprinkled in quite a few dishes on the menu to this day, as well as sold in many stores. It’s a Back Eddy staple. The Back Eddy has now been family run by some pretty phenomenal people for the last 16 years.

The atmosphere is inviting and very relaxing. Particularly now with all of their festive decorations making the place feel ‘oh so magical’.

Each month they feature different lunch and dinner specials, as well as a monthly dessert(made in house).

The majority of their dishes are all made from scratch in house and with plenty of love, so you are guaranteed to always have a fresh flavorful experience.

One of my absolute favorite dishes of theirs is the ceaser salad. Nothing fancy, but they make their own dressing, and it is sooo darn good. I can eat it every day. In fact, when I am home every year, I pretty much do eat it every day. I have yet to find another around the globe that compares.

This time around on our ladies of leisure dinner, rather then one of their tantalizing menu items, we were after one of their other classics. Hot Rocks.

Hot Rocks are just that, heated marble slabs, that you get to cook your own food on, right at your table.

It’s seriously a lot of delicious fun. They come out already nicely heated and then you place them on the flames to keep the sizzle going.

You have the choice between meat rocks, seafood rocks or a combo of both. We decided to go for the combo rocks which included, Lobster, Prawns, Chicken and Beef, along with plenty of various veggies.

The platter is very abundantly stocked, and has a fabulous array of house made butters and dips. So you absolutely will no be going home hungry – better bring those stretchy pants.

First thing was first though. I needed to prepare my palette by getting the vino flowing(lets not forget who we are talking about here). It’s simply the classy lady way to begin any culinary journey. For a small Northern establishment they do have quite a good little selection of Vino to choose from. I opted for a Rose, a nice inbetween of white and red.

With hot rocks, your act of having dinner truly turns into an experience. It so nice to share fabulous food, great chat, and good drinks all while being surrounded by an extremely comfortable environment. It’s the best way, and always creates it to be nothing less then memorable.

You won’t forget how full you were in the end either. Good thing the seats have wheels on them – in case you can’t get up and need to be wheeled out. Isn’t that a classy mental picture?!

The Back Eddy truly is a Northern Gem, and it only gets better with age. That’s right, just like a fine wine. If you find yourself in Northwest Territories, and particularly in the Hay River area, make sure you stop in and enjoy some Northern class and true North hospitality.
